Commis I - Yù & Mì

About the role

Mandarin Oriental Downtown, Dubai, based in the Yù & Mì kitchen section, is looking for a Commis I to assist in preparing and presenting high-quality dishes according to recipes and guidelines set by senior chefs. The Commis ensures consistency, cleanliness and proper handling of ingredients while supporting daily kitchen operations, reporting to the Chef de Partie.

Key responsibilities

• Assist in the preparation and presentation of high-quality dishes in line with hotel standards.
• Follow recipes, portion controls and presentation specifications set by senior chefs.
• Keep the workstation and kitchen equipment clean and organised at all times.
• Support mise en place and daily kitchen operations, delivering dishes on time during service.
• Cooperate with other kitchen sections for smooth workflow and service excellence.
• Comply with health, food safety and hygiene standards, including HACCP requirements and UAE Municipality mandates.

Required profile

• High school qualification or equivalent.
• A degree or higher national diploma in hospitality or culinary arts is preferred.
• At least 1 year of culinary experience as a Commis in a high-volume hotel or restaurant is preferred.
• Passion for bakery and willingness to learn and grow within the culinary team.

Required skills

• Basic food handling, preparation and kitchen operation skills.
• Familiarity with basic food hygiene and safety standards is an advantage.
