Sous Chef - Pastry and Bakery

About the role

Grosvenor House Dubai and Le Royal Meridien Beach Resort & Spa is looking for a Sous Chef for its pastry and bakery department in Dubai. The role supervises cooks and kitchen workers, coordinates kitchen activities and ensures food quality and presentation.

Key responsibilities

• Supervise and coordinate cooks and kitchen workers, and assist them with tasks and provide what they need.
• Determine how food should be presented, create decorative displays and ensure proper portion, arrangement and garnish.
• Monitor the quantity of food prepared and the stock of kitchen supplies and food.
• Inform Food & Beverage service staff of menu specials and out-of-stock items, and prepare special meals or substitutes.
• Maintain kitchen logs for the food safety program and ensure food meets quality standards, notifying the manager of non-compliant products.
• Assist management with hiring, training, scheduling, evaluation, coaching and discipline of staff.
• Follow company, safety and security policies, report accidents and unsafe conditions, complete safety training and certifications, and keep uniforms and appearance professional.
• Address guests' service needs and build positive working relationships within the team.

Required profile

• Technical, trade or vocational school degree preferred.
• 4 to 6 years of related work experience.
• At least 2 years of supervisory experience.
• No license or certification required.
