Assistant Manager Stewarding and Hygiene

About the role

The Assistant Manager Stewarding and Hygiene at the DoubleTree by Hilton Fujairah City oversees all stewarding operations across the property and ensures food safety, sanitation and hygiene standards are met. The role works closely with the Executive Chef, Food & Beverage, Engineering, Housekeeping and other departments.

Key responsibilities

• Oversee inventory control of china, glassware, linen and silverware, keeping accurate records and availability for food and beverage operations.
• Ensure kitchen and food service equipment, dishwashers and cleaning tools are clean, secure and maintained, with preventive maintenance and timely repairs.
• Develop, implement and monitor sanitation procedures across kitchens, storage areas, dishwashing facilities and F&B outlets, in line with hotel standards and food safety regulations.
• Implement and monitor HACCP-based food safety procedures, including documentation, critical control points, temperature checks and corrective actions, with the Executive Chef and food safety personnel.
• Carry out regular hygiene inspections and audits, and ensure corrective actions are taken within agreed timelines.
• Monitor food handling, storage, temperature control, labelling, date marking and stock rotation to prevent cross-contamination.
• Establish cleaning schedules, deep-cleaning plans, sanitation checklists and disinfection procedures.
• Ensure safe storage, dilution and use of cleaning chemicals, and coordinate pest control activities.
• Monitor departmental costs, supplies, equipment usage, breakages and wastage, and manage waste segregation, disposal and recycling.
• Recruit, train, supervise, coach and mentor team members, run hygiene and HACCP training, and coordinate with the Learning & Development team.
• Maintain records of inspections, HACCP monitoring, temperature logs, cleaning schedules, chemical use, pest control, equipment maintenance and training attendance, and drive continuous improvement.

Required profile

• High school diploma or university degree (highest required level).
• Several years of experience in hotel management.
• License or certification (not specified).
