Assistant Restaurant Manager - Jara by Martín Berasategui

About the role

Dorchester Collection is recruiting an Assistant Restaurant Manager for its Jara restaurant by Martín Berasategui in Dubai. The role leads the day-to-day operations of the restaurant and works together with the team to deliver a high standard of service and guest experience.

Key responsibilities

• Spearhead the day-to-day operations of the restaurant so guests receive the best possible experience.
• Help source, hire, mentor and develop the team through a cohesive training and development programme.
• Monitor revenue targets and keep costs within pre-set budgets, including beverage cost, payroll and other expenses.
• Hold a daily team briefing before service to inform the team of daily hotel events and the upcoming service.
• Liaise with other departments to keep the outlet's presentation, cleanliness and maintenance (furniture, equipment, floors, fixtures and fittings) at a high standard.
• Work with the hostesses to optimise restaurant reservations for productivity, guest satisfaction and revenue.
• Collaborate with the service team on the quality of beverage preparation and presentation, and on beverage inventory control.
