Commis 3 - Kitchen Assistant

About the role

SLS Dubai Hotel and Residences, a luxury 5-star city hotel belonging to Ennismore under the Accor group, is hiring a Commis 3 in its kitchen. The hotel has 946 units across 75 floors in Downtown Dubai. The Commis 3 prepares food, assists the chef and ensures food safety and service standards.

Key responsibilities

• Prepare ingredients for cooking, including portioning, chopping and storing food before use
• Weigh, measure and mix ingredients according to recipes or personal judgment
• Wash and peel fresh fruits and vegetables where required
• Prepare and cook food according to recipes
• Serve food in proper portions and arrange it correctly for waiters and guests
• Keep food storage areas clean and store potentially hazardous foods at the correct temperature according to HACCP guidelines
• Follow food safety and handling policies and personal hygiene procedures
• Notify the manager if food does not meet specifications and check appliance temperatures with thermometers and thermostats
• Monitor food quantities and portions to control waste, and stay on duty until the next shift takes over or until discharged by the Head Chef or Senior Chef
• Report maintenance issues to management or maintenance and keep up to date with food safety programs and local, state and federal regulations

Required profile

• Able to move, lift, carry, push and pull objects of up to 20 kg without assistance
• Able to stand, sit or walk for an extended period or an entire shift, and to reach overhead and below the knees
• Ability to work under demanding and strenuous situations
