Commis I - Kitchen Assistant

About the role

Al Maha Desert Resort and Spa, a Luxury Collection property in the Dubai Desert Conservation Reserve, is hiring a Commis I for a full-time position. The role covers food preparation, cooking and kitchen hygiene, and is based at the resort with no direct reports.

Key responsibilities

• Prepare ingredients for cooking, including portioning, chopping and storing food, and wash and peel fresh fruits and vegetables
• Weigh, measure and mix ingredients, then cook food according to recipes, quality and presentation standards
• Operate ovens, stoves, grills, microwaves and fryers, and test foods to check they are cooked sufficiently
• Prepare cold foods such as salads, cold sandwiches, condiments and dressings
• Set up and break down the workstation, serve food in proper portions and wash and disinfect the kitchen area, tables, tools, knives and equipment
• Check appliance and food temperatures, and report maintenance needs, accidents and unsafe conditions to the manager
• Follow food safety policies: personal hygiene, product rotation (FIFO), dating and labelling, coolers and freezers, cold chain compliance, and HACCP guidelines for hazardous foods
• Maintain kitchen logs and stay up to date with the food safety programme and Dubai Municipality standards
• Use kitchen tools and knives safely, keep knives sharpened and follow all safety procedures

Required profile

• 2-3 years of experience
• Ability to stand, sit or walk for long periods and to lift objects up to 25 pounds
• Adherence to company, safety and security policies, and completion of safety training and certifications
