EAM - Food & Beverage

About the role

FIVE Hotels and Resorts is looking for an Executive Assistant Manager (EAM) for its Food and Beverage division in Dubai. The role partners with the Director of Food and Beverage to lead the entire division, covering restaurants, bars, nightlife venues and in-room dining, and deputises for the Director in their absence.

Key responsibilities

• Oversee day-to-day operations of all restaurants, bars, nightlife venues and in-room dining, ensuring operational standards and service excellence.
• Drive the financial performance of the division: revenue, GOP, payroll, cost and profitability targets, with support from the Director and Finance.
• Support annual budgets, business plans, forecasts and sales strategies; analyse outlet performance and identify cost-saving initiatives.
• Manage manning, payroll, rostering, inventory, purchasing and cost control.
• Work with Executive Chefs on menu engineering, pricing, portion control and food cost optimisation.
• Develop and improve F&B standards, policies and procedures, and monitor competitors and guest feedback to strengthen the brand.
• Engage with VIP guests, resolve escalated concerns and build a strong online reputation.
• Ensure compliance with licensing, food safety and health and safety regulations.
• Lead training, coaching and talent development, and support major events, launches and high-volume periods.

Required profile

• Minimum 5 years of senior Food and Beverage leadership experience, ideally in a luxury hotel, lifestyle hospitality or high-volume multi-outlet setting.
• Proven experience leading restaurants, bars, nightlife venues and in-room dining.
• Ability to deputise for the Director of Food and Beverage and take full accountability for the division's performance.
• Strong leadership, problem-solving and stakeholder-management skills.
