Executive Sous Chef

About the role

Pullman Hotels & Resorts is looking for an Executive Sous Chef in Ras Al Khaimah. The role supports the Executive Chef in running the kitchen and stewarding, manages costs and budgets, and leads a high-performing kitchen team in a 5-star resort setting.

Key responsibilities

• Support the Executive Chef in managing daily kitchen and stewarding operations.
• Monitor food costs, operating expenses, payroll and departmental budgets, and ensure menus are accurately costed with standardized recipes and presentation guidelines.
• Maintain full compliance with HACCP standards and local health and safety regulations.
• Recruit, train, coach and develop kitchen and stewarding team members, and lead briefings, performance evaluations and training.
• Collaborate with Food & Beverage Operations on seasonal promotions and menu developments.
• Oversee food quality, stock control, purchasing and storage, and monitor guest feedback for continuous improvement.
• Keep equipment, workstations and storage areas to the highest standards.
• Manage high-volume operations, major events and peak business periods in Banqueting and All-Day Dining.

Required profile

• Proven experience in a senior culinary leadership role, preferably as an Executive Sous Chef or Chef de Cuisine in a 5-star resort in the UAE / GCC.
• Strong operational experience in Banqueting and All-Day Dining.
• Excellent leadership, communication and team development skills.
