Head Chef - Greek Cuisine

About the role

FIVE Hotels and Resorts is looking for a Head Chef for its Greek cuisine kitchen in Dubai. The role assists the Executive Chef in supervising day-to-day culinary operations at the group's venues, ensuring five-star food quality, presentation and consistency, and sets bespoke culinary standards for specialty kitchens and banqueting.

Key responsibilities

• Plan and curate menus, including recipes for food tasting sessions approved by the Executive Chef or Executive Sous Chef
• Supervise daily food preparation, inventory control and the hot plate during service
• Inspect stores and refrigerated areas four times daily, monitor spoilage and report to the Executive Chef or Sous Chef
• Conduct training on kitchen equipment and develop internal processes for consistent culinary excellence
• Collaborate with the purchasing department on ingredient selection and work with the culinary teams on chef directives
• Maintain documentation, logbooks and checklists, and ensure compliance with Dubai municipality and HACCP regulations
• Address staff concerns, promote personal hygiene and foster an inclusive workplace

Required profile

• 3-5 years as a Head Chef in a high-volume luxury hotel environment
• Culinary degree or equivalent experience in a similar role preferred
• Pizza preparation experience, or previous Pizzaiolo role, preferred
• Knowledge of American or pub cuisine is a plus
• Previous experience in Forbes or LQA-rated properties is advantageous
• Fluent English; additional languages such as Arabic, German, Italian, French, Spanish, Russian or Mandarin are a plus
