Italian Sous Chef - Italian Nationals Preferred

About the role

Avani Ibn Battuta Dubai Hotel is looking for an Italian Sous Chef, with Italian nationals preferred. The role organises the restaurant kitchen so that it runs safely, smoothly and profitably within the hotel, develops and maintains the cuisine concepts and standards, and leads the team under the Executive Chef.

Key responsibilities

• Organise all activities within the restaurant kitchen to keep operations safe, smooth and profitable.
• Develop and maintain the restaurant's cuisine concepts and standards for food preparation and presentation.
• Keep up with the local market and recommend menu changes based on seasonal product availability.
• Help achieve department budget goals and minimise food cost through proper preparation, inventory, requisition, food pars and control systems.
• Follow Minor Hotels' food preparation and presentation guidelines and recommend improvements to them.
• Maintain food safety and protection, including food handling, dating, storage and rotation, and basic sanitation practices.
• Forecast weekly business demand to plan staffing and food production efficiently.
• Keep the outlet safe and manage its assets, including a monthly preventative maintenance inspection.
• Lead and take part in departmental training, and supervise team members, including hiring and discipline together with the Executive Chef.
• Promote positive inter-departmental relations and lead by example with a hands-on approach.
