Sommelier

About the role

FIVE Hotels and Resorts is hiring a Sommelier in Dubai. The role combines wine expertise, beverage service supervision and food-and-wine pairing, with a fixed monthly salary of AED 6,400.

Key responsibilities

• Recommend appropriate wine pairings for dishes on the menu and educate guests and colleagues about wines, regions, grape varieties and winemaking techniques.
• Prepare curated mise-en-place for each beverage service and supervise the beverage service with attention to detail.
• Collaborate with the culinary team on food and wine pairings and with wine purveyors on current trends; maintain and regularly update the wine list.
• Lead and inspire the team, set and monitor targets, create a budget plan and track sales and cost records.
• Develop and deliver training programmes for staff and ensure compliance with licensing laws.
• Inspect the quality of opened wine, maintain and clean beverage service equipment, and implement a stock control system.
• Take part in daily and monthly food and beverage meetings and spearhead special projects.

Required profile

• A minimum of 3 years of sommelier experience in a luxury hotel in the UAE.
• Fluent English; additional languages are a plus.
• Strong communication, organisational and supervisory skills, and a proactive, detail-oriented approach.

Required skills

• Sophisticated knowledge of wines, regions, grape varieties and winemaking techniques.
• Computer literacy with Word, Excel and Outlook.
• Exceptional knowledge of the Opera hotel PMS.
