Chef de Partie – Full-Time Kitchen Role

About the role

Le Méridien Hotels & Resorts in Dubai is seeking a Chef de Partie to join its Food & Beverage team. The role involves preparing special meals, ensuring food quality, and supporting the kitchen operations in a high‑volume hotel environment.

Key responsibilities

• Prepare special meals or substitute items and ensure proper portion, arrangement, and garnish.
• Regulate temperature of ovens, broilers, grills, and roasters.
• Pull food from freezer storage to thaw in the refrigerator.
• Maintain food logs and monitor the quality and quantity of food prepared.
• Communicate assistance needs during busy periods and inform the Chef of excess items for daily specials.
• Inform service staff of menu specials and out‑of‑stock items.
• Prepare and cook food according to recipes, quality and presentation standards.
• Prepare cold foods and ensure food safety compliance.
• Assist management with hiring, training, scheduling, evaluating, counseling, disciplining, motivating and coaching employees.
• Follow all company safety, security, and uniform policies and report any hazards.

Required profile

• Technical, Trade, or Vocational School degree.
• At least 3 years of related culinary work experience.
• No supervisory experience required.
• No specific license or certification required.
