Cost Controller

About the role

The Meydan Hotel, located at the iconic Meydan Racecourse in Dubai, is seeking a Cost Controller to manage food and beverage cost control, inventory and profitability. The role will support the F&B department by providing accurate cost analysis, reporting and recommendations to maximise margins.

Key responsibilities

• Calculate food and beverage costs and compare invoices, requisitions and sales.
• Verify receiving reports, correct coding and perform daily transfers from POS to inventory system.
• Conduct spot checks on purchasing, receiving, storing, issuing and bar inventories.
• Create sales keys, inventory codes and recipes; prepare recipe costings with Executive Chef and F&B Director.
• Perform monthly food, butcher and alcohol tests to determine yields and compliance.
• Control portion sizes, minimise waste and pilferage, and conduct market surveys.
• Check quality, quantity and pricing of goods received against invoices.
• Monitor supplier rebates, entertainment and duty meal verifications.
• Produce monthly F&B cost reports, inventory turnover and beverage potential reports.
• Participate in half‑yearly stock takes, linen and equipment audits, and menu engineering.
• Post daily inter‑outlet beverage transfers, month‑end journal vouchers and variance reports.
• Conduct periodic purchase price comparisons with other hotels and provide analytical support for F&B decision‑making.
