Cost Controller

About the role

The Cost Controller will join the Finance department of Mandarin Oriental Downtown, Dubai, supporting the hotel’s financial performance by ensuring accurate cost management across food, beverage and store operations. Reporting to the Chief Accountant, the role is central to maintaining cost integrity and driving profitability.

Key responsibilities

• Monitor and analyse food, beverage and inventory‑related costs against budgets and forecasts, investigate variances and prepare cost reports.
• Manage inventory accuracy through stock records, physical counts, reconciliations, par‑level settings and initiatives to reduce waste and excess stock.
• Maintain the integrity of SCM, POS and master data by ensuring correct item setup, pricing, recipes and reliable consumption reporting.
• Support purchasing and supplier management with price validation, invoice verification, cost impact analysis and data‑driven recommendations for negotiations.
• Oversee receiving and stores operations, ensuring compliance with policies, accurate documentation, proper stock rotation and inventory security.

Required profile

• Degree in Finance, Accounting or a related field.
• Proven experience in cost control within a hotel or hospitality environment.
• Strong analytical mindset with a focus on accuracy and detail.
• Ability to work collaboratively in a fast‑paced team and uphold integrity in financial reporting.
