About the role

Join Hilton’s vibrant culinary team as a Chef de Partie in the Trader Vic’s Kitchen. You will craft delicious Polynesian‑inspired dishes while ensuring consistency, quality, and safety in a fast‑paced, high‑volume environment.

Key responsibilities

• Prepare and plate great‑tasting dishes according to standard recipes, maintaining taste and presentation consistency.
• Supervise line cooks, providing guidance and support in the absence of senior chefs.
• Maintain a clean, organized work area and prevent cross‑contamination.
• Monitor ingredient quality, enforce proper storage, and manage stock rotation.
• Assist with cost control initiatives to improve gross profit margins.
• Ensure compliance with health, safety, sanitation, and alcohol awareness regulations.

Required profile

• Diploma or Bachelor’s degree in Culinary Arts.
• Minimum of 1 month of relevant experience in an A‑la‑carte or Asian Fusion/Polynesian kitchen.
• Ability to work effectively in a team‑oriented, high‑pressure kitchen environment.
