About the role

A full-time, non-management Commis 1 Pastry position is available at a St. Regis property in Palm Jumeirah, Dubai. The role covers the preparation, baking and decoration of breads and pastries, in line with the hotel's culinary standards.

Key responsibilities

• Prepare breads and pastries, including making doughs and fillings, proofing, baking and decorating as appropriate.
• Review the production sheet to know which baked goods will be made each day.
• Prepare and cook food according to recipes, quality and presentation standards and food prep checklists.
• Maintain kitchen logs for food safety compliance and keep the Chef informed of excess food for daily specials.
• Use baking and measuring tools safely and correctly, and follow food safety handling policies and personal hygiene procedures.
• Check appliance and food temperatures, monitor portion quality, and report issues to management.
• Assist management with hiring, training, scheduling, evaluating, coaching and motivating staff, and act as a role model.
• Follow company policies, report accidents and unsafe conditions, complete safety training, and keep a professional appearance and confidentiality.

Required profile

• Preferred: a technical, trade or vocational school degree.
• Preferred: at least 2 years of related work experience.
• No supervisory experience required.
• Physical ability to lift up to 25 pounds, move over uneven surfaces, reach overhead and below the knees, and stand or walk for long periods.
