Restaurant Manager – The Bay

About the role

We are seeking an experienced Restaurant Manager to lead The Bay, the beachfront restaurant at Mandarin Oriental Jumeira in Dubai. The successful candidate will act as an ambassador for the hotel, ensuring exceptional service, operational excellence, and a memorable guest experience.

Key responsibilities

• Oversee all operational and administrative aspects of the restaurant, adapting focus based on business volume.
• Maintain and monitor compliance with SOPs, quality standards, and cleanliness through regular walk‑throughs with engineering and housekeeping.
• Collaborate with F&B and culinary teams to plan menus, pricing, and promotional events that drive revenue.
• Manage reservations and optimise seating capacity to maximise turnover.
• Analyse service quality audits, guest feedback and incident reports, and implement improvement action plans.
• Forecast business needs and plan manpower, equipment and supplies efficiently.
• Ensure menus are accurate, up‑to‑date, correctly presented and distributed.
• Maintain records of annual leave and public holiday clearance for staff.
• Perform any additional duties requested by management related to hotel operations.

Required profile

• Proven experience managing a restaurant or similar food‑and‑beverage outlet in a luxury hotel environment.
• Strong leadership with the ability to motivate and develop a team.
• Excellent planning and organisational skills, adhering to the “5Ps” principle.
• Customer‑focused mindset with a commitment to delivering high‑quality service.
• Ability to work collaboratively with culinary, engineering and housekeeping departments.
